Hello,
There are no *simple* examples of mapping to 3D derived from the UV space: there is code to texture the input with a UV checker board as to produce the images you can see on https://doc.cgal.org/latest/Surface_mesh_parameterization/index.html#Chapter_Planar_Parameterization_of_Triangulated_Surface_Meshes, but it relies on the OpenGL texturing functionalities for the lowest parts.
What you are doing sounds correct; if you would like you can share the code and I will have a closer look.

We currently have an implementation for mapping back from the UV space to the 3D space utilizing an AABB tree/barycentric coordinates, but after looking into the actual CGAL implementation of what is occurring in build_AABB_tree() and locate_with_AABB_Tree(), I have my doubts as to whether this is correctly mapping back from the UV space to the 3D space.
